After spending a week being sick and not feeling up to par, making an elaborate dessert for the week was the last thing I wanted to do. Imagine my delight then, when I came across this flourless cake and realized that not only is it naturally gluten free, but it would also satisfy the massive chocolate craving I endure every 12 hours.
This cake is the easiest recipe I have ever made. There’s no need to whip air into the eggs. You can use any kind of chocolate you have hiding in the pantry. You can even leave out the espresso powder if that feels too fancy. Adapt it to your kitchen, and you’ll have a chocolatey sweet treat at the end of it.
I had a Lindt orange chocolate bar and a Lidl brand orange chocolate bar sitting around, so I used both in this recipe. Had I wanted to make the citrus stand out even more than it already did, I’d have massaged some zest into the granulated sugar. The note below shares more about how to get citrus into this cake if you’re using regular chocolate. If you would rather stick to just chocolate, forget the citrus altogether.
I prefer a really dark, decadent chocolate when it comes to my cakes and ice creams. This cake definitely fits the bill. As long as you use the proper amounts and kinds of butter, sugar, eggs, and cocoa powder written, the rest is pretty up to your palate.
