If you asked me to combine the flavors of warm, buttery candy and decadent chocolate, this is what I’d come up with. The cookie alone has the nostalgic flavors of a butterscotch toffee that you can still taste even after it’s dissolved, and the chocolate sandwiched between makes this the perfect one cookie to have with a side of piping hot coffee. It’s so good.
I have seen this cookies make their runs around the internet around holiday season, and as Ramadan begins to make its way to us, I thought I would start compiling some recipes together that would make hosting, gifting, and celebrating a breeze.
These cookies come together with five basic ingredients, can all be made in one bowl (truthfully), and get baked for less than 15 minutes. They really are so easy to make, can be dipped, sandwiched, or topped, and look beautiful every single way.
These cookies are called lace cookies because of the way the cookie “dough” bakes, spreads, and turns into a thin, crispy, caramelized disc. They naturally create a lace pattern, no mold or fancy piping tips necessary - just let your oven do all the magic.
Many recipes call for equal quantities of almond flour, which you can definitely use, but I opted for oat flour as that’s what I had on hand. Use what you have.
There’s also light corn syrup used in the recipe. This can be swapped out with a maple syrup or even equal amounts of heavy cream if you don’t have either syrups. All this does is help to create that beautiful glistening sheen on the crackle of the cookie after it has finished baking and cooled down.
For Ramadan or Eid, stack a few of these on top of one another inside a treat bag, add a dua tag, and share with family, friends, and neighbors. These would be great for a post iftar or taraweeh treat.
These are ridiculously easy to make!
Everything comes together in a small saucepan on medium low heat.
Use a teaspoon or a small cookie scoop to equally measure out the dough while it’s still warm.
Bakes in the oven for less than 15 minutes.
Can be sandwiched with tempered chocolate, nutella, biscoff spread, pistachio cream, or your favorite nut butter!
